Beet Salad

This salad is loaded with foods of high nutritional benefit. All of the ingredients will promote good health and even good digestion. You may not like beets, but your body loves them!They are a great source of antioxidants, they help lower homocysteine levels in the body, they are a great source of B vitamins, and also iron, copper, manganese, and magnesium. The greens are a great source of vitamin A, carotenoids and flavonoids. They are great for helping with digestion, too! Try to eat them regularly!

1 lb. of beets, either boiled, steamed or roasted, medium dice
4 scallions, chopped fine
3 garlic cloves, more or less, finely minced
1 cup of chopped crispy walnuts. (Crispy nuts are those which are soaked overnight with some sea salt, then dehydrated at low oven temperature until crispy. This removes the objectionable phytates that chelate minerals from our bodies, and renders the nuts much less bitter)
Sea salt and pepper to taste
Extra virgin olive oil
Sherry or other good quality vinegar
Mix the first four ingredients. Pour olive oil and vinegar to dress the salad. Use salt and pepper to taste.
