Lots of foods are immune boosters, but this dish is loaded with them! Garlic is antibiotic, and anchovies provide wonderful immune-system
boosting Omega-3 oil. Swiss chard is loaded with vitamins and minerals!
- One bunch of Swiss Chard, sliced into
- 6 oz. whole wheat penne pasta or wheat
pasta of choice.
- 3-5 garlic cloves, finely chopped
- 1/3 cup Sourdough bread crumbs
- Two or three anchovies, minced, or 2 Tsp.
- Extra Virgin olive oil
- Parmesan cheese
Boil water for the pasta. When water boils, add pasta and time for five minutes. Add the Swiss chard and cook together for another three minutes. Drain and pour into a large bowl. In a small frying pan, pour in some olive oil and when heated, add the garlic. Before the garlic browns, add the breadcrumbs and the anchovy.
Cook over medium heat until the breadcrumbs absorb all the oil.Pour the breadcrumb mixture over the pasta and Swiss chard and top with cheese. Add more oil if the dish looks too dry.
